When purchasing the raw ingredients, we place a large emphasis on the quality and the freshness. For this reason, we prefer to use high-quality and local products direct from the farmers, such as pasture-raised pork and lamb. The poultry and eggs come exclusively from a neighborhood's farm, our venison is from less than 10 km away, and many of our cheeses are ordered directly from the artisan.
